Cooking method

Rinse rice thoroughly. Garlic, preferably juicy, and onion, peel and chop as finely as possible. Peel the carrots, rinse under cold water and grate.

Heat vegetable oil in a deep frying pan. Put the onion with garlic and fry a little until the characteristic onion aroma appears. Add grated carrots and sweat a little. Add tomato paste and mix thoroughly.

Heat water in a kettle to a boil. Put the prepared rice into the pan with vegetables and mix thoroughly until smooth. Warm, stirring, for about 1-2 minutes, then pour boiling water, mix and reduce the heat to the smallest. Cook covered with a tight lid for about 20 minutes.

This wonderful rice that we cook in tomato sauce with the addition of browned vegetables, can also be called vegetarian or lean pilaf. It always turns out very tasty, fragrant and is perfect as a main dish (especially on fasting and fasting days) or a side dish for meat, fish or poultry.

Preparing tomato rice in a deep frying pan is completely simple, fast, and any novice housewife can handle it. Depending on your preference, you can make the rice crumbly or juicy - this is regulated by the cooking time. By the way, this dish will perfectly help to diversify the daily menu.

Ingredients:

  • 1 cup (250g) rice
  • 1 medium carrot

  • 50 - 70 ml tomato sauce

Cooking method

First of all, cut the onion into half rings, three or finely chop the carrots and sauté together in a deep frying pan in preheated oil. We do this for several minutes, stirring occasionally with a spatula, not until a crispy crust, but until transparent. Then salt, pepper, add seasonings and mix.

Rice groats are washed and distributed in an even layer over vegetables.

Required products:

- 1 cup round rice
- 100 gr. tomato paste,
- 300 gr. sweet pepper,
- 300 gr. onion,
- 200 gr. carrots,
- 20 gr. salt,
- 10 gr. granulated sugar,
- 1 tbsp vinegar,

For salad, we will chop the vegetables: finely chop the onion, three carrots and cut Bell pepper. The vegetables should be about the same size so they cook evenly and at the same time. Since the carrot is the hardest, it is better to just grate it.




We put the vegetables in a saucepan, salt them, add granulated sugar and pour vegetable oil. Simmer vegetables for 20 minutes over low heat.




Cook the rice until almost cooked, put it in a sieve so that the water drains from it. Then we put the rice to the vegetables that are stewed.




Immediately put the tomato paste with the rice. Since the rice is ready, then the tomato paste will come in handy. If your rice turns out to be undercooked, then simmer the geo for another 10 minutes with vegetables, and only then put the tomato paste.

Almost every day we have to cook. And it may happen that the side dishes familiar to us seem to be something ordinary. But in fact, there are many options, it’s just that we ourselves sometimes drive ourselves into the framework of gastronomic conservatism. It would seem, how can you cook fried rice in a pan, and even so that it is unusual? (I repeat that the products in our recipes use the most common ones that are available in any store).

I present to you a simple recipe for fried rice with tomato paste, vegetables and chicken fillet.

What you need for cooking:

  • Chicken fillet - 300 gr.;
  • Long grain rice - 1 cup;
  • Turnip onion 1 pc.;
  • Carrot 1 pc.;
  • Tomato paste - 1-2 tablespoons;
  • Bulgarian pepper 1 pc. (I used pieces of peppers of various colors);
  • Greens - dill, green onions;
  • Spices and spices - thyme, turmeric, red pepper, salt.

Chilled chicken fillet can be bought at the store without any problems, but it is cheaper to get it if (a carcass, the price for 1 kg is lower) on your own.

So, to cook fried rice with chicken and tomato paste, we need to perform the following operations:

1. Food preparation

The first thing to do is wash all the vegetables, rinse the chicken fillet with cold water and soak the rice.

It is best to soak a glass of rice in hot water first (so that the surface is hidden), this will shorten the swelling time and general cooking dishes.

If you use steamed rice (found in stores), then you can not soak it. And ideally, rice cereal would also be washed. And calmly move on to vegetables.

The washed onion is peeled, and cut into squares, you can also use straws, but the finer the onion is cut, the more inconspicuous it is in the finished dish (the taste remains).

Peel the carrots, cut off both ends, rinse again with water and grate (if lazy like me) or cut into strips. For the purposes of the experiment, you can also cut into cubes, in combination with bell pepper it will look good in the finished dish.

Sweet (Bulgarian) peppers are cleaned as follows: cut out the middle, clean out the seeds, if desired, you can rinse again, but not necessary. Cut first into narrow strips (1 cm maximum), then into cubes.

Our recipe for fried rice with chicken is supplemented with bell pepper, it is not necessary to use it, but then the dish will be lecho without any aftertaste.

If desired or necessary, you can add garlic, although it is not in our rice recipe, but it will not be superfluous.

We cut the chicken fillet into square pieces, 1-2 centimeters in size. If you meet veins (sometimes it happens), then it is better to remove them, otherwise it will be impossible to chew such pieces.

2. Processing chicken and vegetables

We put a frying pan with thick walls on medium heat, pour vegetable oil so that the bottom is moistened.

After 5 minutes, add chopped onions and carrots and fry. Until the onion becomes soft and golden, and the carrots are slightly lighter (it will transfer some of its color to the oil). Also cubes. bell pepper, but we would rather stew them than fry them. It should take about 5 more minutes.

Then fry cubes in a pan with vegetables chicken fillet. Until the moment they become white from one-time. It usually takes 5-7 minutes.

At this stage, you can add to the chicken. Our choice fell on thyme, turmeric and red ground pepper(you can use black).

3. Cooking rice with tomato paste

The next step in making fried rice is to combine the ingredients. Namely, to our mixture of chicken and vegetables, we will add previously soaked rice. It is possible together with the liquid in which it was soaked. By changing the ingredients a little, you can get delicious.

We season with the main ingredient, namely, two (or one) tablespoons of tomato paste, they will give the color and taste we need (as planned). And gently mix all our dish.

At this stage, you can add salt, but not very much, rice, of course, will absorb the salt, but we will still have a chance a little later.

Therefore, it is better to play it safe and do it at the end of cooking. 5-10 minutes before the end of readiness.

Next, you need to pour rice with tomato paste, vegetables and chicken with water, so that the liquid covers the surface. It is advisable to do this with boiled warm or hot liquid. Otherwise, you can delay the preparation of the dish.

Close the lid and leave for 10-15 minutes.

If there is not enough water and the fried rice crunches on the teeth, then you can add more (1 cm layer). And leave it for a while.

Then you can sprinkle with herbs, in our case, these are chopped green onions and dill. And also salt. Why do I suggest salting at this moment? It's just that the rice is already almost boiled soft and you can simply try it, respectively, there will be less chance of oversalting.

Stir constantly for 5 minutes, rice with vegetables in a pan, helping the remaining moisture to evaporate, as well as to mix our dish with herbs and salt, added a minute earlier.

Full readiness comes at the moment when all the water has evaporated.

For greater friability and softening of taste, you can add butter(a piece of 2x2 cm), this is unlikely to make the dish dietary, but for a change you can sometimes use it.
