This wonderful pie was baked for us by grandmother Yulia when she came to visit from Irkutsk (by the way, grandmother worked as a cook and chef for more than 30 years). Delicate, rich in juices, fragrant salmon pie can captivate anyone who tries it. Naturally, for such a pie, you need to make a good homemade yeast dough for pies and wait a couple of hours until the dough rises several times. But this expectation is worth those minutes of enjoyment and pleasure that you and your family will get by tasting hearty, lush and airy.

Due to the fact that our fish pie is closed, the filling is very tender, and the bottom crust is well saturated with fish and onion juice. The success of such a pie largely depends on the prepared dough. In my opinion, the dough used in the recipe will be ideal for a fish pie. Recipe for a closed pie with salmon

So, to prepare a delicious fish pie, you need to take:

  1. 1 kg homemade pie dough;
  2. fresh salmon fillet 500-700 g;
  3. 2-3 large onions;
  4. salt and black pepper to taste.

When the dough for the pie has already come up, it must be well knocked out with a wooden or silicone spatula. Now let's move on to the pie filling. Onions need to be peeled and cut into rings thinner. On low heat with a drop of vegetable oil, you need to soften the chopped onion. To make it soft and transparent. Rinse boneless salmon (fillet) and cut into thin strips. We divide the dough into 2 parts. Roll out the lower circle with a rolling pin and hands.


We spread the slightly cooled warm onion and slices of salmon, a little salt and pepper with black pepper (it will give the fish a magical aroma). Roll out the second part of the dough also into a circle and cover the pie on top. From the leftover dough, you can make decorations for the pie in the form of leaves, as our grandmother did for us. Bake for about half an hour at 180 degrees, then another 10 minutes at the lowest heat. Turn off the oven and leave the pie in the hot oven for another 3-5 minutes. Now you need to slightly sweat the fish over low heat - 5-10 minutes. Mix salmon with greens in one cup, pepper and salt at the same time.

Let's move on to the test. Combine flour with baking powder. Beat eggs with mayonnaise, salt and sour cream. Then stir in the flour bit by bit. The result should be a dough that resembles low-fat sour cream in consistency.

Ingredients:

  • Salmon (fillet) - 450 g.

Cooking process

Then stir in the sugar and salt. Pour into a bowl.

Now add flour in small portions, stir with a fork. When it thickens, stir with your hands. You should get a thick elastic dough. If you don't like the consistency, just add more flour or milk.

Now the dough should be infused - leave it for 30-40 minutes.

Let's get to the stuffing

Salmon needs to be cleaned of skin, bones - processed as it should. Then cut into small pieces and fry over medium heat in oil (15 minutes).

Rinse spinach with water, pat dry. Then it should be poured with boiling water to soften. Now it remains to chop finely or medium.

Mix salmon with spinach, flavoring everything with sour cream, as well as salt and pepper.

Is the dough swollen? Excellent! Let's take care of them.

Shake it well. Then divide into two parts (2/3 and 1/3).

Ingredients:

  • Wheat flour - 260 g.
  • Butter - 130 g.
  • Chicken eggs - 3 pcs.
  • Water - 2-3 tbsp. spoons;

  • Salt, pepper - to taste;
  • Cream (10-20% fat) - 210 ml.
  • Semi-hard cheese (Russian, Dutch, etc.) - 160 g.
  • Broccoli - 300 g.

Cooking Laurent fish pie

Cut cold butter into pieces. Pour flour into it and grind well until crumbs are obtained. Crack in 1 egg, add water and mix well. You will get a stiff shortcrust pastry.

It needs to be put in the refrigerator for half an hour to harden.

Add salt, pepper and 2 eggs to the cream. Beat with a mixer or whisk.

Ingredients:

  • Ready yeast dough - 500 g.
  • Salmon - 440 g.
  • Boiled rice - 1-2 cups.

Defrost the dough and roll out into a rectangular layer.

Step 5: prepare the dough.


In a container with dissolved dry milk, add the remaining cold water and mix with a tablespoon.
Then pour this liquid into a bowl with egg mass and simultaneously beat with a mixer or whisk until smooth.
Pour the yeast mixture here and mix everything well again with a tablespoon.

We begin to pour flour into a bowl in small portions, continuing to beat with a whisk. When the mass becomes smooth and silky, pour vegetable oil into it, but do not stop mixing everything.

Immediately after the mixture begins to become thick, continue kneading the dough with clean hands. It should be tight and elastic. We give it a rounded shape, cover the bowl with a cloth towel and put it in a warm place to infuse for 1–1.5 hours. During this time, the dough should rise. 2–3 times.
As soon as this happens, knead it again with clean hands. Thus, all the carbon dioxide, which was formed due to the active action of the yeast, will come out of it, and the dough will fall. Again cover the bowl with a cloth towel and put it in a warm place. As soon as the dough rises for the second time, put it on the kitchen table and start preparing the pie. Okay, let's get the stuffing ready.

Step 6: Prepare Rice.


Pour the rice into a sieve and rinse several times under running water until the liquid becomes clear.

Then move the grits to a medium saucepan. Fill it with ordinary cold water so that it 1.5–2 fingers covered the component. We put the container on a small fire and wait for the liquid to begin to boil. As soon as this happens, reduce the heat and cover the pan with a lid. Cook the rice until the water has completely evaporated. Then turn off the burner, and pour the component into a sieve and rinse again under running water. This must be done so that the cereal cools faster and does not stick together while we prepare other ingredients for the pie. Now we leave the component aside so that all excess liquid is glassed from it.

Step 7: Prepare the onions.


Using a knife, peel the onion from the husk and rinse under running water. We spread the component on a cutting board and chop into squares. Pour the finely chopped onion into a clean plate.

Then pour olive oil into a frying pan and place over medium heat. When the container with the contents warms up well, put the chopped onion into it. From time to time, stirring with a wooden spatula, fry the component until a pale golden color. Immediately after that, turn off the burner, and set the pan aside.

Step 8: prepare the salmon.


We wash the salmon fillet under running water and put it on a cutting board. Dry all sides with kitchen paper towels. Now, using a knife, remove the skin from the back and chop the fish into pieces. Move the finely chopped component to a free plate.

Step 9: Prepare the filling for the pie.


Put boiled rice, fried onions and chopped salmon in a medium bowl. Add salt and black pepper to taste here and, using a tablespoon, mix everything thoroughly until smooth.

Step 10: Prepare the salmon pie.


When the dough is ready, put it on the kitchen table, crushed with a small amount of flour. With a knife, cut the ball into two unequal parts ( approximately 1/3 and 2/3). First, take the second piece of dough and use a rolling pin to roll it into a thin cake. Attention: we try to make it as round or square as possible, depending on the baking container.

We spread the layer of dough in the form and with our hands we level the edges so that they go on the sides. Using a tablespoon, pour the filling here and level it.
Now roll out the second part of the dough on the kitchen table, also giving it a rounded or square shape. Gently cover the cake with a layer and pinch the edges.

We make a shallow incision in the center so that steam comes out of it during baking.

Preheat oven to temperature 180 °С. Immediately after that, put the form with the dish on the middle level and cook for 35–40 minutes until a golden crust forms on the surface of the cake. Then turn off the oven, and take out the container with the help of kitchen gloves and set aside.

Step 11: serve salmon pie.


When the salmon pie has cooled slightly, transfer it to a flat plate, cut into portions and serve at the dinner table with tea, coffee or even dry white wine.

How to cook: chop the leek and onion and fry until transparent in oil in a frying pan. Finely chop the fish fillet, rinse the rice, boil it until half cooked. Mix rice with fish and onion, add chopped dill, pepper and salt. Put half of the dough in a baking dish, put the filling on it and cover with the second half of the dough, pinch the edges nicely. You will need: 580g boiling water - 580 ml, yeast dough - 500 g, salmon - 400 g, onion - 1 pc., 1 cup rice (steamed) - 1 tbsp., olive oil - 1 tbsp. l., ground black pepper, salt.

How to cook: pour the rice, without washing, into a dish suitable for a microwave oven, salt, pour boiling water over, without stirring and without covering the lid, cook at full power for 17 minutes, then cover the rice with a lid and leave for 5 minutes, then remove the lid and give it cool down. Finely chop the onion and fry in olive oil until browned, mix with rice. Remove the skin from the salmon with a sharp knife, chop it finely and mix with rice and onion, pepper and salt. Separate one part from the dough, roll out the remaining two and put in a pie dish, making sides, put the filling. Roll out the reserved part of the dough and cover the pie, pinch the edges, make a hole in the center through which the steam will escape. Pie with salmon and potatoes (puff pastry)

You will need: salmon fillet - 600 g, puff pastry - 500 g, potatoes - 200 g, onions - 2 pcs., yolk - 1 pc., sugar - 1/2 tsp, ground black pepper, salt.

How to cook: chop the onion into half rings, potatoes - thin plastics, fish - medium-sized pieces, then sprinkle it with sugar, onion, pepper and salt, mix, cover with cling film and remove for pickling in the cold for half an hour. Roll out the dough into a thin layer, cut out two unequal circles from it. Moisten the cake mold with water, lay out a larger circle - it should turn out so that the dough covers the bottom and walls of the mold completely, hanging over their edges. Put potatoes on the dough, then fish with onions, cover with hanging edges of the dough. You will need: salmon fillet - 800 g, puff pastry - 500 g, canned tuna - 300 g, canned olives - 200 g, mozzarella cheese - 150 g, 50 ml olive oil - 50 mp, tomatoes - 2 pcs., basil - 1 bunch, egg - 1 pc., pepper, salt.

How to cook: Grind tuna with olives and olive oil in a blender to a paste. Roll out the dough and put it on a baking sheet, put salmon fillet on it in one piece or cut it, grease the fish with cooked tuna paste. After that, put the tomatoes cut into thin circles on top, sprinkle with basil leaves and put the pieces of mozzarella cheese, pepper and salt. Fold the edges of the pastry towards the center to form a pie. Coat the dough with a beaten egg, bake the cake in an oven preheated to 180C for half an hour.

Salmon pie is prepared like this:

  1. First, I peel and wash each potato in cold water. I cut by any method in any form.
  2. I also peel the onion and chop it into very small cubes.
  3. I sprinkle a little flour on the kitchen table so that the dough that I put on it does not stick. I divide the ball into two approximately equal parts.
  4. I take one part and roll it out with a rolling pin into a layer.
  5. Then I pre-lubricate a special baking dish with vegetable oil and spread the same layer on the bottom.
  6. I spread chopped potatoes over the entire area of ​​\u200b\u200bthe dough.
  7. The next layer will be onions.
  8. I cut the salmon fish into a pie into small, more medium pieces - the third layer.
