Banana and regular kefir ice cream is a natural, simple and healthy dessert. To see the benefits, compare the ingredients in my recipe with what is usually listed on the packaging of commercial sweets. Believe me, various commercial thickeners and stabilizers are not very good for your body. And how many unnecessary calories are contained in each portion - the mind boggles!

Prefer variety? Get creative by replacing the banana with any other fruit: peach, nectarine, pear. Melon or seasonal berries are perfect for dessert. The principle is the same, the shades of taste are the most original.

Ingredients

  • banana - 2 pcs.;
  • kefir - 300-400 ml;
  • honey (or fruit syrup / jam) - 2-3 tbsp. l.

Cooking time: 180 minutes

How to cook?

Use a few medium-sized bananas for the recipe. Peel them, cut into arbitrary pieces. Transfer the fruit to a clean container and chop thoroughly with a blender.

Pour 2-3 tablespoons of honey into the puree. Don't like this spicy sweetness or are you afraid of an allergic reaction? Replace it with any syrup or jam.

Take kefir as the basis of our dessert. Add 350-400 ml of a drink of any fat content to the banana mass. Stir with a whisk or mixer and transfer to a plastic container.

Next, you need to remove the container with ice cream in the freezer for 2-2.5 hours.

To prevent your banana ice cream from working out with lumps of ice crystals at home, you will need to tinker a little with it. In fact, everything is not so difficult - try it and see for yourself.

After the ice cream has been in the freezer for one hour, remove the container. Mash the dessert lightly with a spoon, and then whisk with a blender for a few minutes. Send the ice cream into the freezer for another half hour - then beat again. Let the ice cream freeze for 30-40 minutes. Banana-kefir dessert is ready.

Remember that it melts quickly, so place it in the bowls just before serving. Garnish with fresh berries or jam, if desired.

Many mothers are familiar with the fear of icy desserts and potential sore throats - especially if the child is prone to colds. In this case, I got out of the situation by resorting to an innocent deception: I prepared fruit-milk or fruit-kefir jelly, “calling” it ice cream.

To repeat the trick, take all the ingredients used in the recipe - plus a heaped tablespoon of gelatin, which must be soaked in 30 ml of water (in a ladle or small saucepan), let it swell a little. Just enough time to beat the bananas with honey and kefir. Heat the swollen gelatin on the stove, stirring vigorously - just do not bring it to a boil.

Once all the crystals have dissolved, add the gelatin to the dessert base. Stir, pour into silicone shaped molds and refrigerate (not in the freezer!) Overnight. In the morning you can please your child with delicious "ice cream", which will retain all the benefits of a fermented milk product and all the vitamins contained in bananas.

To make kefir ice cream with a banana, you need kefir, bananas, honey or granulated sugar.


Ripe bananas are suitable for ice cream, you can even take very soft ones, in which the skin is covered with black or brown spots. These fruits are the most aromatic and sweet.

Peel the bananas. Cut the pulp into slices and place in a deep container.



Pour honey according to your taste. If the honey is thick, then it must be heated in a water bath.



Pour kefir.

If possible, it is better to use a home-made fermented milk product or buy it from a trusted dairyman on the market. If you're on a diet, use low-fat kefir, which you can find at your local supermarket.



For this step, you will need a submersible shredder or food processor.

Grind the contents of the bowl until smooth. To taste. Sweeten if necessary.



For freezing, you can use special plastic ice cream molds, disposable cups or a container with a lid. Most conveniently - portioned molds.

Pour the kefir mass into molds. From this number of products, I got 9 portion molds.

Send it to the freezer until it is completely frozen - for about 3-5 hours, depending on the power of your equipment.

Strawberry Ice Cream Recipe

3 egg yolks,

250 ml of milk

250 ml cream

100g sugar

2 cups strawberries

1 tsp vanilla essence

Combine the whole strawberries with half the sugar in a large, convenient bowl. Put in the refrigerator for a while. In a separate saucepan, combine the yolks with the milk and the remaining sugar. Place the saucepan on the stove over medium heat and, without boiling, stir until the mixture is smooth. The sugar should be completely dissolved.

Transfer the mixture to a separate bowl and let cool to room temperature. After cooling completely, put the bowl in the freezer for 2-3 hours. When doing this, remember to stir the ice cream every 20 minutes to prevent small pieces of ice from appearing in the ice cream.

After cooling, add cream and vanilla essence. Then remove the remaining strawberries with sugar from the refrigerator and lay out beautifully on top.

Chocolate ice cream recipe

You will need the following ingredients:

250 ml of milk

250 ml cream

75 grams of sugar

125 g of dark grated chocolate

Place milk and sugar in a convenient bowl. Put the mixture on low heat and mix thoroughly. The sugar should be completely dissolved. Remove bowl from heat and cool to room temperature. Then place in the refrigerator, after adding cream there. Remember to stir the ice cream. When it begins to thicken, add the grated chocolate. The treat is ready.

Kefir ice cream recipe

This recipe will appeal to everyone who follows the figure. There are only 270 Kcal in one serving, while the delicacy is very tasty and well refreshed.

You will need the following ingredients:

2 glasses (or 500 g) kefir,
4 tsp (about 60-80 g) honey (can be replaced with fructose or sugar),
1 cup (approximately 150-170 g) strawberries

Mix all ingredients in a blender until smooth. Pour it into molds and place in the freezer for about an hour. You can first put fruits, berries, nuts in molds, and only then pour the mass.

Ice Cream Recipe with Nuts and Maple Syrup

For this exquisite treat, you'll need these ingredients:

100g walnuts

50g butter

2 tbsp. l. brown sugar

2 tbsp. l. maple syrup

375 ml of milk,

375 ml cream

To begin with, melt the butter over low heat, add the nuts and fry them for 1-2 minutes. Sprinkle them with sugar on top and continue to fry over low heat. After 3-4 minutes, the nuts should be crispy. Remove from heat and cool to room temperature. Pour milk into a separate bowl, add cream and cooled roasted walnuts to it. Stir gently and add maple syrup. Then place the mixture in the refrigerator.

Ice cream recipe at home

To make childhood ice cream, you will need (for 6 servings)

600-700 gr. cream with a fat content of 33%,
200-250 gr. condensed milk

First, whip heavy cream, gradually adding condensed milk to taste. Then put the mixture in a suitable dish and place in the freezer. The average freezing time is 3 hours or a day, the time depends on the shape and volume of the dishes, as well as the power of the freezer. You can serve the finished delicacy with grated chocolate, nuts, fruits or berries. Optionally, you can make a vanilla or chocolate ice cream by adding vanilla or cocoa powder to taste.

Recently I came across a recipe for making ice cream from kefir, banana and honey. This composition puzzled me a little, but I still decided to try, what can come of it? The result was surprisingly pleasant.

You definitely can't buy such an ice cream made from bananas and kefir, the products are simple and natural, and the dessert itself is quite light and refreshing.

For cooking we need:

  • kefir 2.5% - 300 ml
  • bananas without peel - 300 gr
  • honey - 2 tablespoons

Grate bananas, peeled, on a coarse grater.

Add kefir and honey and stir with a blender until smooth.

Honey can be added not all at once, but in parts. so it doesn't get too sweet.

Now this mixture needs to be poured into suitable molds for solidification.

I decided to take small plastic cups and canapé skewers in the form of forks to make something like a popsicle.

We wrap the cups in foil and use it to fix the skewers in the middle of the glass with the ice cream mixture. We put it in the freezer overnight.

In the morning we take it out, unfold the foil, put the glass in hot water for a few seconds (that's why you can't take glass molds - they can crack due to temperature changes) and easily shake our ice cream out onto a plate.

Now it can be wrapped in foil again and stored in the freezer. In fact, it turned out that it is not very convenient to eat it on such a stick and in this form, so you can simply freeze it in portioned forms and eat it with a spoon.

It is not quite the same as the store, it is like a delicious "snowball", because it contains practically no fat. But it is so pleasantly refreshing and cooling that in the heat of 30 degrees it was just salvation.

The next day I made a large portion, added a little mint and a teaspoon of lemon juice and froze it in disposable glasses. Now I often cook such homemade ice cream from bananas and kefir in hot weather.

In general, you can add anything to such ice cream. For example, chopped nuts and chocolate, or some fresh berries.

Ingredients for 4 servings:

  • kefir - 1 liter;
  • black chocolate - 75 gr.;
  • cream 33% - 130 gr.;
  • lemon juice - 1 tbsp. a spoon;
  • icing sugar - 3 tbsp. spoons;

Preparation:

This ice cream will require a little preliminary preparation. We need to completely freeze kefir and then completely defrost it to get a delicate cream cheese. I take kefir with a fat content of 3.2%. I put it right in the package in the freezer for 12 hours. Kefir should be natural, thick and tasty.

In the evening, cover the sieve with clean gauze in 2 layers and spread the completely frozen kefir. We leave at room temperature. In the morning, you will have a delicious, delicate cream cheese with a slight sourness. From 1 liter of kefir, I get 300 grams of cream cheese.

We put the cream and the dishes in which we will beat them, as well as the nozzles for the mixer in the refrigerator for an hour. Then whisk the chilled cream and icing sugar until bulky and shiny peaks.

Then, continuing to beat, add kefir cream cheese into the cream in parts.

Melt dark chocolate in a water bath.

Add melted chocolate to cream, beat.

Ready-made cream - put ice cream in ice cream cups or in a container and send it to the freezer for 3 hours. This ice cream can be prepared without an ice cream maker.
