    We put the oil in the freezer at least an hour before cooking - it will need to be grated, and it will be easier to do this with frozen oil.

    Three butter and cheese into a wide bowl, sift flour and add sugar. Knead the dough by hand - at first in appearance it will resemble an oily crumb rather than a soft, airy, elastic dough.
