What to cook from watermelon pulp. What can be made from watermelon for the winter: simple homemade recipes Watermelon disappears, what can be done

August is the time to bring home a huge striped watermelon and eat your fill of its sweet pulp. Alas, this summer berry can present an unpleasant surprise, and we are not talking about nitrates. A completely peaceful watermelon can “go berserk”, or, more precisely, turn out to be sour inside. This is probably familiar to many: we bought a watermelon that looked as beautiful as a picture, cut it open, and inside there was fermented compote.

Experts are sure that improper transportation and storage are to blame. In Ukraine, they like to transport barrels on barges or in large trucks. The result is the same - the berries crash against each other, and inside you get a cocktail that is hazardous to health. It also happens that initially overripe watermelons are brought, but this is absolutely forbidden.

You can knock on the berry, inspect it from all sides, but it is impossible to visually determine that it has spoiled. But there is one little trick - lightly scratch the watermelon peel with your fingernail, it should smell like freshly cut grass. If there is no smell or slightly sour, it is better to refrain from such a purchase. True, even such an experiment does not give a 100% guarantee - the mashnut culture may taste normal, but it will already begin to ferment, accumulating pathogenic bacteria and toxic substances.

Experts on melons say that a picked watermelon stays fresh for no more than 2 - 3 weeks. Sellers try in every possible way to extend the shelf life of the product by treating the berries, for example, with a 25% solution of lime and chalk or alabaster and hot paraffin. “Striped” lies on the counter like a “rejuvenating apple” for a whole month and even a month and a half, having absorbed through the peel all the harmful chemicals with which it was treated. The most harmless thing that such a watermelon can cause is an upset stomach, but it can also provoke sand and kidney stones.

To avoid poisoning, it is best to pour boiling water over the watermelon. And then immediately with cold water so as not to scald the skin. After this, place it on the table, but do not wipe it, but let it dry on its own.

Unripe watermelons are the first to rot.

By the way, it is recommended to buy watermelons that are not very large, so to speak, for one time. Be sure to ask the seller for permission to trade, which must indicate the date of harvest. Let us remind you that the berries must be picked a maximum of three weeks ago, no later. You can keep cut watermelons in the refrigerator for no more than a day, otherwise there is a risk that the half-eaten watermelon will “go wild” right at home.

Oddly enough, unripe watermelons are also prone to rotting. They cannot ripen on their own, but they turn sour once or twice, especially if they lie in a warm place. Unripe berries, before they spoil, can be pickled or pickled for the winter. But late varieties of melons stay fresh willingly and for a long time. But, alas, farmers, in pursuit of profit, bring early varieties.

On Internet forums, Ukrainians complain that almost every third watermelon is “smelly.” People mostly bought low-quality products at the supermarket, so they calmly showed the receipt and got their money back. Moreover, both sour and green watermelons were handed over to stores.

“I picked up a watermelon at the market, but it turned out to be dried out and fermented inside,” complains Tatyana, a resident of the Dnieper. – I took it back to the seller, so he apologized, returned the money, and also gave a small melon as compensation. It is clear that the person values his reputation and respects his customers.

There were also those who simply threw the sour fruit into the trash can and were too lazy to bring it back. Although the supermarket did not mind accepting damaged goods.

According to the Law "On the Protection of Consumer Rights", the buyer can contact the store administration and they must replace the product with a quality one or return the money spent. But only if you have a sales receipt,” explains Elena Lukatskaya, chief specialist of the food safety department of the State Consumer Service of the Dnepropetrovsk Region. - It’s more difficult in the market, checks are issued there very rarely, but there the administration must also be responsible for the goods. A person has the right to take a risk and buy without a receipt or to insure himself and demand this document.

How to understand that it is better not to eat watermelon

If you notice a sour smell, and the red part of the watermelon itself has become sticky, this is a sure sign that it is absolutely forbidden to eat it, but must be disposed of. A watermelon that sits on one side is more active in the same place and spoils, so constantly turn it and try to change the position of the berry on the plate. You should also avoid having water or watermelon juice constantly in the plate or in the watermelon itself - this will also speed up acidification.

A sure sign that the watermelon has gone bad is that it has become limp, soft, rather than dense and crunchy, and its juice has changed color.

How to freeze watermelon for the winter

There is no need to freeze the product whole. The presence of a large amount of liquid will cause the watermelon to become slimy during the thawing process. It’s better to freeze delicious berries, as an original addition to New Year’s cocktails or sorbets, using one of the suggested methods.

There is no need to freeze the product whole

Product freezing options:

  1. Cocktail cubes. Separate the watermelon pulp from the rind, remove the seeds, and cut into cubes. Place on a plastic cutting board. Place in the freezer. To avoid further sticking, let the watermelon pieces freeze. Then wrap the pulp in a low-temperature-resistant plastic bag. Place in a quick freezer.
  2. Pulp in syrup. Cut into slices. Prepare syrup from 40 g of water and 60 g of sugar. Roll each slice in cool sugar syrup. Place on a board and freeze in the freezer. Then put in plastic bags and place in the food compartment of the freezer. Quick freezing of a semi-finished product will ideally preserve its taste and nutritional value.
  3. Smoothie. Separate the cooked pulp from the peel and seeds. Beat with a blender. The resulting mixture can be frozen in ice cube trays. An excellent New Year's treat for a child's sweet table.
  4. Fruit icecream. Place the pulp, whipped with a blender, into an ice cream mold. Freeze the mixture in a quick freeze for 2 hours. Take it out, insert a stick into each well, and return it until the product is completely frozen.
  5. Juice. Prepare it like a smoothie. Before freezing, squeeze the mass through several layers of gauze. Freeze the liquid in ice cube trays. For a richer sweet taste, add a little sugar.

Never throw away the used pulp after squeezing the juice and the trimmed green peels. We use the pulp in jam, and from the peels we make candied fruits.
