If you don’t want to weigh, you can measure the amount of ingredients by eye using a jar.

  1. Pour three parts olive oil into a jar (to make it easier to measure).

2. Squeeze one part of lemon juice there.

3. Add a small pinch of black pepper. And a good pinch of salt. Taste it – it should seem a little too salty.

I advise you to make dressings for vegetable salads a little salty because soon you will add them to the salad, and vegetables consist of 80% water, so the salt will dissolve, be distributed throughout the salad, and it will turn out perfect.

4. Close the jar with a lid and shake well. That's all - our base sauce is ready, from which you can make different variations. In the case of Greek salad, you need to add a little oregano to this sauce.

Homemade Greek Salad Dressing with Mustard

If you add a little mustard to the base sauce, the dressing will take on a French flavor (especially if you add balsamic vinegar instead of lemon juice).

Products:

  • Olive oil – 100 g,
  • Lemon juice – 33 g,
  • A heaped teaspoon of Dijon mustard,
  • Oregano – 1 tsp,
  • Salt and pepper to taste.

If you want to make a mustard dressing, it's very simple, take the basic olive oil and lemon juice dressing (which we made above) and add a good heaping teaspoon of Dijon mustard to it. Stir well.

The dressing is ready - you can pour it over the salad.

Just don’t add too much dressing to the salad, because in this case the salad will become greasy, and the acid will cause the vegetables to release too much juice, and they will become “tired.”

That is, about a third of this amount is quite enough.

Yogurt sauce

Take a basic dressing (how to make it described above) and add a heaping teaspoon of neutral yoghurt. Mix well. The sauce is ready! Of course, you can make the sauce entirely based on yogurt, but it will not be quite a sauce for Greek salad.

Greek salad dressing with wine or balsamic vinegar

As I wrote above, you can use wine or balsamic vinegar as an acid in the dressing, replacing lemon juice with it. Here we use wine, but the same can be done with balsamic.

Products:

  • olive oil - 0.5 tbsp.,
  • wine or balsamic vinegar - 4 tbsp.,
  • basil - 1 tbsp,
  • oregano - 1 tbsp,
  • salt, pepper to taste
  1. Take half a glass of olive oil.

  • Mix cucumber puree with yogurt. Instead, you can use any fermented milk product (kefir, yogurt, low-fat sour cream).
