  1. Peeled the new potatoes. Mine was not very large in size, so I left it intact. If you have large potatoes, it is better to cut them into 2-4 parts. So, I washed the peeled potatoes, put them in a saucepan, filled them with water and left them on the stove until they boil.
  2. When the potatoes boiled, I threw in the dill branches (not only the greens, but also the stems themselves - now dill is very fragrant, so I use all of it), bay leaves, peppercorns and salt. And left it to cook until the potatoes were soft.
  3. In the meantime, I got busy with a delicious addition to potatoes - cooking mushrooms. Peeled the onion and threw it into the frying pan.
  4. I chopped the mushrooms (as I already said, I used royal champignons) and sent them along with the onions. Fry in vegetable oil for 7 minutes over high heat, stirring constantly. I salted them and added a little ground pepper at the end.
  5. When the potatoes were ready, I threw out the dill branches, bay leaves, and peppercorns. I drained the water.
    I threw in finely chopped dill and garlic cloves, peeled and passed through a press.
  6. Then sour cream. There is a very important point here: I used very fatty, tasty homemade sour cream of good quality, without sourness, with a pronounced creamy taste. Store-bought won’t work here at all – it’s too sour. Therefore, if you don’t have good sour cream, it is better to use good quality butter.
  7. After the sour cream, I added fried mushrooms and onions.
  8. Covered with a lid and stirred everything thoroughly so that the sour cream melted and the garlic, dill and mushrooms were distributed over the potatoes. I didn’t stir with a spoon, because the potatoes are very tender and soft and simply break with a spoon.
  9. That's all, delicious new potatoes with royal champignons, herbs and garlic are ready! It is incredibly tasty, with a bright creamy mushroom taste. And I’ll tell you a secret: in my family, no one stops at one plate of these potatoes with mushrooms - everyone always takes extra!
