They all differ in their components and the cooking process itself. Since the first time I tried to make royal pork, other pork recipes in the oven have faded into the background.

I think this is all because of the wonderful combination of pork with mushrooms, dill, sour cream and cheese. These ingredients complement each other very much, without overpowering the taste of each.

Of course, another advantage of the pork recipe in the oven is that it does not require much time to prepare. You just need to lay out the layers correctly and everything will definitely work out. And although I often cook this dish on weekdays (because my husband really loves meat, like most men, in general), it is also well suited for a holiday table.

It is especially wonderful to cook royal pork with mushrooms in the summer, when we can use fresh mushrooms and fresh dill.

Cut the pork into 4 pieces. Lightly beat them on both sides with a kitchen hammer, salt and pepper to taste. Place in the refrigerator to marinate for 1 hour, covered with cling film. Cut the onion into half rings. Carefully place the onion on the chilled and marinated pork. Grate the boiled and cooled potatoes and place them on top of the onions. It should completely cover the onion and pork.

Let's make the sauce. To do this, mix mayonnaise with adjika until smooth. Completely cover the surface of the boiled grated potatoes with the prepared sauce. Cut the tomato into small slices and place on top of the sauce.

Place the pork on a baking sheet and place in an oven preheated to 180°C for 1 hour. 5 minutes before the dish is ready, sprinkle the dish with finely grated cheese and put it back in the oven to bake until fully cooked. Russia has always been famous for the presence of a variety of mushrooms in its forests. To prepare royal pork in a fur coat, you will need at least 2 types of mushrooms. The royal meat comes out very juicy, tasty and aromatic.

  • homemade full-fat sour cream - 2 tbsp. l.;

Wash the pork and cut into 4 equal pieces, add salt and pepper to taste. If the pieces are too thick, you can beat them off with a kitchen hammer. Place in the refrigerator to marinate for 40 minutes. Peel and wash the mushrooms, cut into slices and mix. Peel the onions and chop into small cubes.

Fry onions and mushrooms in a frying pan in vegetable oil, add salt to taste. Cook for 10 minutes, stirring constantly. Then gradually add sour cream, mixing all ingredients well so that they are saturated with sour cream. The sauce should boil slightly along with the mushrooms for 2 minutes. When the mushrooms with onions in sour cream sauce are ready, they need to be cooled.

Remove the cooled and marinated pork from the refrigerator and carefully place it on a baking sheet. Place mushrooms in sour cream sauce on top of the meat. Next, pour cream over the dish and place in the oven, preheated to 180°C. Bake the pork royally for 1 hour.

A few minutes before the dish is ready, season it with finely grated hard cheese.

Cooking steps

How to cook meat like a king? This process is not at all complicated; no special skills or culinary talents are required. Well, let's get started:

  1. Cut the meat across the grain into pieces of small thickness. You can pre-marinate the pork in salt, pepper and seasonings. We also beat the meat if desired, this is especially necessary when using beef. Our carbonate turned out to be quite soft and tender even without treatment.
  2. Cut the onion into rings or half rings (whichever is more convenient for you).

  3. Potatoes must be cut into slices.

  4. We cut the mushrooms crosswise.

  5. Fry the champignon pieces in butter for about 5 minutes. The mushrooms should be thoroughly fried, then mix them with 2 tablespoons of mayonnaise.

  6. Now place the layers on a baking sheet greased with vegetable oil in the following order: pieces of meat, onion rings, potatoes, fried champignons with mayonnaise, again potato slices. Salt and pepper each layer.

  7. Coat the last layer of potatoes with mayonnaise.

2. Peel the boiled potatoes and grate. Remove the skins from raw onions. Cut it into thin rings, also the tomato. Mix sour cream with spicy adjika. But you can also use mayonnaise, add some salt.

3. Place the pieces of pork on a greased baking sheet or in a mold so that they do not touch each other.

4. Place onion rings on the pork and scatter as many as you can over the entire surface.

5. Now grate the boiled potatoes. Place it carefully and press down so that the chips don’t fly apart.

6. Grease the potatoes with hot sauce with the addition of adjika.

7. Now scatter the tomato circles.

8. Place the pan in the oven and cook the pork for 40 minutes at 190 degrees.

9. Grate the cheese coarsely.

Royal pork with mushrooms

700 g pork (pulp);

200 g mushrooms (fresh champignons);

1 onion;

2 tablespoons of oil;

3 tablespoons of mayonnaise;

150 g cheese;

Preparation

1. Cut the mushrooms into slices. Pour a spoonful of oil into the frying pan; no more is needed. Warm up and add mushrooms. Fry for 5 minutes on the highest heat until a light crust appears. Turn off and let the mushroom filling cool.

2. Cut the onion into thin half rings, add salt and crush with your hands. Cut the tomato into circles.

3. Rinse the pork, then cut across the grain into chops half a centimeter thick. Cover the pieces with film and tap a little with a hammer.

4. Rub the meat with salt and pepper and immediately transfer it to a greased baking sheet.

5. Scatter the onions.

6. Place pieces of fried mushrooms on top.

5 slices of pork (150-170 g each);

5 pineapple rings;

2 cloves of garlic;

0.8 kg of meat;

150 g cheese;

150 g onion;

250 g pickled mushrooms;

Any spices;

Preparation

1. Cut the meat, beat it with a hammer, but not too much. We rub the pieces with any spices at our discretion, but remember that mushrooms, cheese and mayonnaise already contain salt, you don’t need to add a lot so as not to spoil the dish.

2. Grease a baking sheet and place the pieces of pork in one layer.

3. Drain the mushrooms into a colander and shake off the marinade. Then we cut each into slices. Place on top of the meat.

4. Chop the onion into thin half rings, sprinkle the mushrooms on top.

6. Now mayonnaise. Stir it well and carefully grease the cheese layer, trying not to dislodge it from the mushroom filling.

Royal pork with pickled onions

Recipe for delicious royal pork with vegetable filling. The highlight of this recipe is the pickled onions. It will give the meat juiciness and piquant taste.

Ingredients

500 g meat;

2 onions;

2 tomatoes;

2 tablespoons of mayonnaise;

Pepper, salt;

70 g cheese;

Table vinegar.

Preparation

1. Add pepper and salt to mayonnaise and stir. If desired, you can squeeze out a clove of garlic. It will perfectly complement meat.

2. Cut the pork into 5 slices. We take an ordinary kitchen hammer and beat the meat several times, but there is no need to be zealous. Then rub it on both sides with mayonnaise sauce.

3. Cut the onion into half rings. Mix 50 ml of vinegar and the same amount of cold water. Pour in the onion. Marinate for half an hour, stir occasionally. Then drain the marinade.

4. Cut the tomatoes into slices.

3. Cut the prunes into strips or small cubes.

Cheese shavings often get past the meat, flow down during baking, and stick to the baking sheet. To avoid having to waste time on washing it, you can cover the sheet with a silicone mat, a piece of foil or oiled parchment.

The cheese crust has started to burn, but the meat is not ready yet? You need to take sour cream, cream or mayonnaise, remove the dish from the oven and grease the cheese with any of these products. They will not prevent the formation of a golden brown crust, but will slow down this process.
