Cute crumb muffins are a culinary invention that will make you fall in love with American cuisine. Our family is addicted to these hearty muffins, so I strive to make them as healthy as possible: add a minimum of flour, as many healthy fruits, nuts and even vegetables as possible. Today I'm going to talk about how I make hearty chicken and cheese muffins. The recipe is detailed and step-by-step, as always. I think you will definitely like it!

Ingredients:

  • Boiled chicken fillet - 200 g.
  • Hard cheese - 80 g (the variety does not matter)
  • Olive oil (can be replaced with sunflower oil) - 100 ml.
  • Milk - 100 ml.
  • Wheat flour - 250 g.
  • Chicken eggs - 3 pcs.
  • Baking powder - 1 sachet (10 g)
  • Salt - a pinch
  • Black pepper to taste


This recipe for snack muffin dough is basic, you can make any filling. In the fall, muffins literally ask for ripe vegetables. These small muffins look very appetizing and are also really healthy: they have very little flour, and you can use whole grains, bran, flakes, and nuts as additives.

How to cook:

In terms of preparation, the secret of muffins is to mix the liquid and dry ingredients separately. The second trick is to do as little kneading as possible when combining the ingredients. Literally three or four movements and place it in the molds. It’s okay if you see small lumps of flour - everything will bake perfectly in the oven. The fact is that if the dough is kneaded thoroughly, it will become heavy, will not rise well in the oven, and will lose its juiciness.

Boil the chicken fillet in lightly peppered and salted water for 15 minutes. For chicken meat, this time is enough to cook well and not turn into rubber.

In a deep bowl, beat 3 eggs.


Add vegetable oil (100 ml.) Use olive oil or any other vegetable oil. For example, corn dough works very well.

And then milk (100 ml) goes into the bowl. Let me remind you that all ingredients should be at room temperature, so if the milk is cold, warm it up a little.

Salt and pepper the batter and add other favorite spices to taste.

Sift flour (250 g) into a separate bowl.

Combine flour with baking powder (11 g)

Mix the dry ingredients using a whisk or mixer at the lowest speed. This is a very important step that many people skip. If the baking powder is mixed unevenly into the dough, the baked goods will not rise well.

Add flour mixture to liquid ingredients.

Finely chop the chicken fillet. Grate the cheese on a medium-mesh grater. You can use several types of cheese, the taste will be more interesting. A piece that has already weathered a little in the refrigerator will also work (you won’t feel this in baked goods).

I love snack muffins with a splash of olives. If you like their taste, you can also use olives in the recipe.

Buy olives with pits - they are much more aromatic and tastier. Getting rid of the pit is not difficult: you need to place the olive on a cutting board and lightly press the fruit with your palm, the pit will pop out on its own.

Mix the resulting dough carefully. Do not use a mixer! Only a spatula or spoon should be in your hands at this moment.

The dough has the consistency of thick sour cream. If it's too runny, add a little flour; if it's too thick, add a little milk. If you follow the recipe exactly (use scales, measuring cups and spoons), you won't have to adjust the thickness.

Place 1 tbsp in muffin cups. heaping spoonful of dough. Look at the photo to see how much dough is needed for one serving.

Muffins with chicken and cheese are baked in the oven at 180 C for 30 minutes.

Ingredients:

  • cottage cheese - 65 g;
  • grated cheese - 35 g;
  • a handful of olives;
  • champignons - 115 g;
  • egg - 1 pc.;
  • dried garlic and oregano - 1 teaspoon each;
  • chicken fillet - 740 g;
  • a pinch of paprika.

Preparation

After cutting the mushrooms, fry them, seasoning with herbs and salt.

To make the mixture more homogeneous, it is better to use a powerful blender. Whisk together cheese, chicken and cottage cheese. Salt everything and mix with the egg. Add mushroom pieces, a pinch of salt and paprika. Place the mixture, which has a mousse-like consistency, into six wells of the mold and place in the oven for half an hour at 180. Minced chicken muffins can be served hot or reheated before a meal; this will not affect the consistency of the dish.

If you have boiled chicken at your disposal, then you can also use it for muffins, using this recipe as a basis.

  • To prepare the dish, take chicken breast. Poultry meat is cut into small pieces or ground into minced meat in a meat grinder.
  • Onions, dairy products or soaked stale loaf crumb are added to the minced chicken for juiciness. To improve the taste characteristics, chicken is mixed with cheese, vegetables, and cottage cheese.
  • Filled muffins are prepared from pieces of raw breast meat. The slices are beaten well and placed on the bottom and along the walls of the molds so that there is free space in the middle for the filling.
  • If chicken muffins are prepared with dough, only boiled chicken, cut into small cubes, is added to it. Kefir is used as a liquid base for such muffins.
  • Chicken muffins are baked in molds made independently from foil or factory-made silicone molds. In order for the products to bake evenly and not dry out, the baking temperature should not be less than 180 degrees, or a little higher.
  • Chicken muffins can be served with a side dish or on their own; they are equally good hot or cold.

Ingredients:

  • 600 grams of chilled chicken fillet;
  • cheese, “Russian” variety – 100 gr.;
  • starch - 2 tbsp. l.;
  • 100 ml sour cream, medium fat;
  • small onion;
  • to taste – dried dill or parsley;
  • one egg;
  • garlic.

Cooking method:

  1. Rinse chicken fillet in cold water. Dry with a disposable towel and cut into cubes about one and a half centimeters in size. Cut the cheese into slightly smaller cubes.
  2. Chop the onion. It’s best to chop it into small slices, but if you don’t like pieces of it in your dish, chop it with a medium grater.
  3. Place chicken and onions in a bowl. Add sour cream, lightly salt, pour in the egg. Season to your taste with ground pepper and a little dried herbs, add finely chopped garlic.
  4. Add potato starch to the mixture and mix thoroughly with a spoon. If it turns out a bit runny, add another spoonful of starch.
  5. Fill the silicone molds to the top with the mixture and place the chicken muffins in the oven. The temperature treatment time depends on the size of the molds, and can take from a quarter of an hour to 25 minutes.

Zucchini Chicken Muffins Recipe

Ingredients:

  • a kilogram of young zucchini;
  • half a kilo of chicken fillet;
  • four eggs;
  • semolina – 50 gr.;
  • three small cloves of garlic;
  • a large bunch of dill;
  • 150 ml yogurt or low-fat sour cream.

Cooking method:

  1. Wash the zucchini, cut off the peel and grate on a coarse grater. Let it sit for a while and squeeze out the juice with your hands.
  2. Cut the washed and towel-dried fillet into cubes up to 0.7 cm in size. Transfer the chicken to the chopped zucchini.
  3. Add dry semolina, chopped dill, about a third of the bunch, and pour in the eggs. Season with pepper, crush or finely grate 2 cloves of garlic, and lightly add salt. Then stir thoroughly and let stand for 20 minutes.
  4. Using a silicone brush, apply vegetable oil to the bottom and sides of the molds. Spread the meat mixture and place in a hot oven for half an hour.
  5. Finely chop the remaining dill and add the greens to the prepared fermented milk product (yogurt or sour cream). Add the remaining chopped garlic, add a little salt and stir the sauce.
  6. Carefully remove the finished zucchini muffins from the molds and serve with the prepared sauce.

Juicy chicken muffins with mushrooms

Ingredients:

  • two onions;
  • half a kilo of fresh mushrooms (champignons or oyster mushrooms are suitable);
  • medium fat cream, liquid – 100 ml;
  • 2 chicken fillets;
  • light soy sauce - 2 tbsp. l.;
  • mixture of “Provencal herbs” - to taste;
  • oil for frying;
  • cheese, “Russian” variety – 120 gr.;
  • six cherry tomatoes.

Cooking method:

  1. Cut the fillet across the grain into slices up to half a centimeter thick. If the pieces are thicker, the muffins will not bake well. Place the chicken in a bowl and pour in the soy sauce. Season with ground pepper, add Herbs de Provence to taste, add a little salt and stir. It is important not to over-salt the meat; if you use dark soy sauce, do not add salt at all.
  2. Wash the mushrooms well and dry, cut into small slices, and chop the onion with a heavy knife.
  3. Heat one and a half tablespoons of sunflower oil in a frying pan, place the onion in it and fry until slightly transparent.
  4. Add the chopped mushrooms and continue cooking over low heat until all the moisture has evaporated. When the mushroom pieces are slightly browned, salt them a little and pour in the cream.
  5. After mixing well, simmer the mushrooms in the creamy sauce for about ten minutes. Mushroom frying should not be liquid. If necessary, extend the simmering time.
  6. Muffin tins are not suitable for making these muffins; they are too low. You will have to make the containers yourself. Take a large sheet of foil, at least 50 cm long, and fold it in thirds to make a long strip. Place the glass on it, retreating about a third from the edge, and wrap it in foil. Without leaving any gaps, fold the free edge over the bottom of the glass and press firmly. Carefully release the resulting mold from the glass and thus make four more.
  7. Place the marinated fillet pieces in one layer on the bottom of the prepared containers. Lay tightly, leaving no gaps. Then place the pieces of meat along the walls so that the middle remains empty.
  8. Fill the cavity to the top with mushroom filling, and place coarse cheese crumbles on top in a thick layer. The next layer will be the tomato, press it lightly to deepen the tomato. “Cherry” can be replaced with large tomatoes, cutting them into slices.
  9. Place the chicken muffins in the oven for 20 minutes, then turn off the heat and bake with the door closed for another 10 minutes. Remove foil and serve.

Chicken muffins with kefir from boiled breast

Ingredients:

  • 350 grams of chicken fillet;
  • 130 grams of whole grain flour;
  • highly purified vegetable oil – 50 ml;
  • a teaspoon of ripper;
  • 90 ml low-fat kefir;
  • one egg;
  • bay leaf;
  • a small pinch of ground paprika and turmeric.

Cooking method:

  1. Pour cold water over the chicken, add turmeric and bay leaves. Bring to a boil over medium heat, skimming constantly. Then reduce the heat and cook the fillet at low simmer until done.
  2. Cool the chicken without removing it from the broth. Then remove and cut into small, centimeter cubes.
  3. Add ground paprika, baking powder and a little salt to the flour, about a quarter of a teaspoon.
  4. Break the eggs into the vegetable oil and lightly beat with a whisk or fork until smooth. Combine eggs with kefir, stir.
  5. Pour the liquid base into the flour and, stirring gently, knead the dough. Add pieces of boiled poultry meat and stir again so that the chicken pieces are evenly distributed.
  6. Place paper muffin cups in a special stand with round recesses and fill them with the prepared dough. Do not fill the paper molds to the top; the dough will rise during baking. It is enough to fill them to two-thirds of the volume.
  7. Place the future muffins in the oven and bake at 180 degrees for a quarter of an hour.

Spicy curd muffins with chicken and tomato

Ingredients:

  • kilogram of chicken breast;
  • 200 gr. low-fat elastic cottage cheese;
  • two onions;
  • a little dill;
  • three tablespoons of unsalted tomato paste;
  • semolina – 4 tbsp. l.;
  • spices – mild, not spicy.

Cooking method:

  1. Peel the onion and grind it together with the chicken fillet in a meat grinder. Grind the meat first and only then the onion.
  2. Add cottage cheese to the prepared minced meat and stir. If the product is grainy, grind it in a meat grinder after chicken.
  3. Season the minced chicken with your favorite spices or just ground pepper. Add salt, add tomato, add finely chopped dill and semolina. After stirring well, let the meat mixture stand for ten minutes so that the semolina swells slightly.
  4. Place in silicone molds and bake for 25 minutes.

Potato muffins with chicken

Ingredients:

  • two medium potatoes;
  • 700 gr. chicken fillet (breast);
  • two eggs;
  • wheat flour – 2 tbsp. l.;
  • three tablespoons of fat sour cream;
  • 5–6 sprigs of fresh dill;
  • seasoning “For poultry dishes”, “For potatoes” - to taste;
  • ground sweet paprika, black pepper;
  • a teaspoon of vegetable oil;
  • a tablespoon of semolina.

Cooking method:

  1. Pour cold water over the breast and boil until tender. Cool without removing from the broth, then lightly dry and cut into cubes. All pieces should be approximately the same size and no more than one centimeter in the rib, less is possible.
  2. Break the eggs into the chicken, add sour cream and finely chopped dill. Grate the potatoes here with a fine grater. Season everything with ground pepper and spices. Add a little ground paprika, salt, add flour and mix well. Do not chop the potatoes in advance, add them last, otherwise they will darken.
  3. To ensure that the muffins keep their shape well and have a crispy crust, apply a thin layer of butter to the walls and bottom of the molds and sprinkle generously with semolina.
  4. Divide the chicken mixture into prepared containers and place in an oven preheated to 180 degrees. Chicken muffins should be baked for no more than 20 minutes until they are nicely browned.

Chicken muffins - cooking tricks and useful tips

  • You can use more than just breast meat for muffins. You can also make wonderful minced meat from thigh and leg fillets.
  • Do not skimp on onions; they add extra juiciness to dry chicken meat.
  • Fill the molds to the top; the chicken muffins will not rise. Place in the oven, first placing it on a baking sheet so that the escaping juice accumulates in it.

For 12 servings you will need:

  • Two chicken breasts;
  • A glass of grated cheese;
  • Half a glass of flour;
  • Half a glass of milk;

  • Natural yogurt or sour cream (for sauce);
  • Salt;
  • Pepper;
  • Green onions;
  • Mayonnaise.

Cooking method:

Wash the breasts thoroughly, add water, and cook. The water needs to be slightly salted. Boil the meat until cooked, place in a dish, and leave to cool. Finely chop the cooled meat.

In a separate container, beat milk with eggs, add flour. Mix the egg-milk mixture with the sauce. The sauce is prepared as follows: natural yogurt is whipped with mayonnaise, seasoned with salt and pepper, and finally chopped green onions are added. Chop the greens and set aside some. Grate the cheese, you should end up with about a glass. Combine the chopped meat with cheese, herbs and part of the milk mass.

The consistency of the dough should resemble a salad. Sprinkle the molds with a small amount of flour. Lay out the meat layers and pour the milk mixture on top. Preheat the oven to 185 degrees, bake the appetizer for about 25 minutes. Sprinkle the finished dish with herbs. Serve the finished meat muffins warm.

Chicken and Vegetable Muffins Recipe

What products are needed:

  • Half a kilo of minced chicken (or two breasts);
  • Average zucchini – about 220 g;
  • 1-2 carrots – 120 g;
  • Average onion – about 100 g;
  • Sunflower + olive oil – only 20 g;
  • Garlic – 14 g;
  • Parsley.

Cooking method:

Wash the carrots, peel them and cut them into small cubes. Heat oil in a frying pan, add carrots there and leave to simmer over low heat. Peel the onion, chop finely, and add to the carrots. Simmer the vegetables for about ten minutes.

Peel the zucchini and grate it. Chop the greens. Defrost the minced chicken, add sautéed vegetables, grated zucchini and chopped herbs. Season the mixture with pepper, add salt, and mix thoroughly. Form the mixture into balls and place in muffin tins. Bake meat muffins for about 35 minutes at 210 degrees.

If chicken breasts are used, the meat must be thoroughly washed, finely chopped, salt and pepper, and combined with two eggs. To make the minced meat juicy, you can add softened bread, milk or sour cream.

  • Two tablespoons of soy sauce;
  • Dried and fresh herbs;
  • 120 g hard cheese;
  • Several cherry tomatoes;
  • Half a kilo of champignons;
  • Two onions;
  • Half a glass of low-fat cream;
  • Salt.

Cooking method:

Wash the chicken fillet and cut into small pieces. Place the meat in a bowl with soy sauce and leave to marinate. Add dried and fresh chopped herbs, add salt and pepper. You can add any other spices. Finely chop the onion and fry until golden brown. Wash the mushrooms, cut into small pieces, and add to the onion. Fry until the liquid has evaporated. After the water has boiled away, add salt and pepper a little. As soon as the champignons begin to become ready, pour the cream into the pan and heat over low heat for about ten minutes.

Place the prepared onion-mushroom mixture into a dish and leave to cool. Place pieces of marinated meat into greased molds. Place cooled mushroom mixture on top. Next, the champignons are sprinkled with grated cheese; half a cherry tomato should be pressed into the cheese. Instead of cherry tomatoes, you can also take regular tomatoes, in which case they need to be cut into small cubes. Bake meat muffins for about 20 minutes at 190 degrees. At the end of this time, you don’t need to take out the appetizer right away; let it sit for another ten minutes. Garnish the finished dish with chopped herbs.

However, few respected housewives know that such small baked goods are very good even without sweet ingredients, but with the addition of unusual products as a filler: chicken, mushrooms or vegetable mixtures.

My grandmother, who often made cheesy chicken muffins, developed her own step-by-step guide using an old, tried-and-true recipe with detailed directions and photos of the process as a base. Having chosen only the best from a possible variety of fillings, she gladly shared her experience with me.

Today I will present to you my grandmother’s recipe for making delicious muffins from chicken breast, which, at your request, is transformed in a few simple movements into fillet or minced meat and with the addition of mushrooms or a delicate cheese mass.

Option with mushrooms

Number of persons: 8 – 12.

Take small muffin or cupcake molds (I personally highly recommend using only silicone ones - they are better suited for such delicate products), a knife, a non-stick frying pan with a diameter of 20 cm, a saucepan with a capacity of 600 ml, deep bowls with a capacity of 400 - 800 ml, tablespoons and teaspoons, a kitchen scale or a simple measuring cup, a cutting board, a medium grater, towels (linen or cotton are best) and a whisk. If you have a mixer or blender, be sure to prepare that too to speed up the cooking time and make your work easier.

  • 200 g wheat flour;
  • 5 chicken eggs;
  • 300 – 400 g chicken breast;
  • 4 – 5 small champignons;
  • 1 carrot;
  • 10 g baking powder for dough;
  • 10 g salt;
  • 7 g ground black pepper;
  • 1 tsp. dried herbs.

  1. Carefully separate the chicken fillet from the breast bone; if we have minced meat, squeeze the juice out of it.
  2. Cut it into small pieces and put it in a frying pan.

  • Pour in sunflower oil and place on low heat.
  • Meanwhile, also chop the carrots and mushrooms and add them to the chicken.

  • Salt with half the reserved salt and pepper the mixture well, add herbs.
    1. We adjust the oven to 180 degrees.
    2. Wash the molds well and wipe dry.
    3. Coat them with margarine or butter.
    4. Pour the flour into a large bowl, add baking powder.
    5. Add a little salt and eggs.
    6. Mix with a blender at low speed.

  • Pour half of the dough into the mold.
  • Place a little filling on top and fill it with a tablespoon of dough.

  • Place in the oven and voila: our muffins are ready in 20 minutes!
  • Ready! We place the still steaming muffins on a beautiful dish and coat them well with mayonnaise or sour cream sauce, but this is not necessary, since such products look complete on their own, and when cut they look simply bomb! The aroma of cooking muffins will definitely attract your family to the kitchen, so you may not have time to bring them to the table.

    Turn the chicken into mince and beat in the eggs. Add the spices from the list, followed by the finely chopped celery stalk. The final touch is grated cheese. Beat the finished mixture thoroughly with a blender to obtain a paste-like mass. Next, distribute the minced chicken into six wells of the muffin tin and bake everything for half an hour at 180.

    Chicken muffins with mushrooms in the oven

    • cottage cheese – 65 g;
    • grated cheese – 35 g;
    • a handful of olives;
    • champignons – 115 g;
    • egg – 1 pc.;
    • dried garlic and oregano - 1 teaspoon each;
    • chicken fillet – 740 g;
    • a pinch of paprika.

    After cutting the mushrooms, fry them, seasoning with herbs and salt.

    To make the mixture more homogeneous, it is better to use a powerful blender. Whisk together cheese, chicken and cottage cheese. Salt everything and mix with the egg. Add mushroom pieces, a pinch of salt and paprika. Place the mixture, which has a mousse-like consistency, into six wells of the mold and place in the oven for half an hour at 180. Minced chicken muffins can be served hot or reheated before a meal; this will not affect the consistency of the dish.

    Chicken breast muffins

    If you have boiled chicken at your disposal, then you can also use it for muffins, using this recipe as a basis.

    • chicken – 190 g;
    • cream – 55 ml;
    • butter – 35 g;
    • egg – 1 pc.;
    • flour – 115 g;
    • baking powder – 5 g;
    • parsley.

    Separate the chicken into fibers and place them in the wells of a muffin tin. Whisk the melted butter with the egg and cream, then add the flour/baking powder mixture. Pour the finished dough over the chicken and bake everything for 20 minutes at 180 degrees. Sprinkle with parsley to finish.
