It is worth noting that puff pastry pies with fruit filling won the recognition of one Japanese chef - Tayashi (19th century).   1. Directly the dough. For 20 pies you will need 500 grams of dough.
  2. Eggs. Required for coating pies. For 20 pies – 1 egg.
  3. Apple is the main filling. For 20 pies, take 600-700 grams of apples (after peeling and cutting out the core, approximately 500 grams of product will remain).
  4. Sugar. Add as desired, the amount of sugar is determined by personal preference. It may not be added at all.

The most delicious puff pastry pies with apples

At the moment, recipes for making apple pies from puff pastry are quite different - each housewife has her own unique recipe.

Therefore, below are step-by-step instructions for preparing pies according to the simplest recipe:

  1. The filling is being prepared. To do this, wash the apples and then cut out the core and seeds. It is also recommended to peel them (but this is not necessary).
  2. Next, the apples are cut into small cubes or grated (you can grind them in a meat grinder) - the method of chopping is up to the housewife’s choice. After that, add sugar (to taste) and mix. Some people replace sugar with honey.
  3. The puff pastry is defrosted (you can put it on natural defrost a few hours before cooking, or in the microwave for 5-10 minutes). There is no point in preparing the dough yourself - the cost will be comparable to buying ready-made dough.
  4. Next, the dough is cut into squares approximately 7x7 cm. The shape of the blanks determines the shape of the pie (can be cut into circles, diamonds, etc.).
  5. The filling is laid out on the blanks. For each workpiece you will need a couple of teaspoons (about 2-3 tsp), after which the workpieces are folded into a triangle. It is important to carefully seal the edges during the sculpting process so that the juice does not leak out.
  6. Next, baking paper is placed on a baking sheet, and the finished pies coated with egg are placed on it. The baking sheet is placed in the oven, which has been preheated. Baking temperature – 180 degrees. Baking time is about half an hour.

Puff pastry buns with apples

You can prepare buns in a similar way. The difference between them and pies is insignificant - they put less apple filling and more sugar in the buns.

You can add cinnamon. They are also baked in the oven for 30 minutes.

So, puff pastry has also gained its popularity due to its ease of preparation. Today, this is one of the most popular types of dough, as it is sold in almost all grocery stores - because it is easy to make. Therefore, it has become more convenient for housewives to purchase ready-made dough rather than prepare it - in terms of price, the cost of the finished dough and the cost of its ingredients (for preparation) are almost the same.

Puff pastry is a real godsend for a working mother: with its help you can save a huge amount of time, which is always in short supply! After all, from such dough you can quickly and easily prepare hearty snacks, pies with a wide variety of fillings as a second course, and, of course, desserts - beautiful and very tender puff pastries.

It’s the latter that I want to tell you in more detail today. As you understand, the filling for sweet puff pastries can be jam, curd mass, and, of course, berries and fruits. One of my favorite options is apples: apple puffs made from puff pastry without yeast come out terribly delicious! The recipe for puff pastry with apples is simple and unpretentious, and it always helps me out when I need to quickly prepare something for tea. And you always get puff pastries with apples from ready-made puff pastry the first time, the main thing is to buy the right puff pastry.

Ingredients for 13-15 puffs:

  • 0.5 kg of ready-made puff pastry without yeast;
  • 3-4 large apples;
  • 6-7 tablespoons of sugar;
  • 0.5-1 tablespoon lemon juice;
  • 3-4 tablespoons of powdered sugar - for sprinkling.

How to make apple puffs:

First, defrost the dough (it is only sold frozen). We do this at room temperature without heating it additionally. If the dough is folded into a roll, then unroll it only after complete defrosting (otherwise the dough will crack at the folds, which will create inconvenience and difficulty when marking the puffs).

Wash the apples, remove the peel and core. Cut into small cubes (approximately 0.5-0.7 cm). Sprinkle the apples with lemon juice and mix gently (this way we protect the apples from darkening).

Cut the dough into rectangles. Try to keep them the same size - then the finished puff pastries will turn out similar to each other (which means they will look very appetizing and neat). The exact dimensions of the rectangle are not of fundamental importance. I made them about 8x12 cm in size.

On each rectangle we make 2 cuts along the long edges, not reaching the end of the dough by about 0.5 - 1 cm.

Place apples on each puff pastry - in a layer of 0.5-1 cm, along the entire length, just short of the edge. Place sugar on top of the apples.

Now we lift the thin cut sections up, attach each middle of the cut section to the middle of the opposite side of the main part of the dough. We try to attach it securely so that during baking these parts do not move away from the base of the puffs.

Place the puff pastries on a silicone mat (or baking parchment) at a slight distance from each other.

Bake in an oven preheated to 230 degrees for 15 minutes (time may vary slightly depending on the characteristics of the oven). When baking, some of the filling may melt and leak out. We just clean up these areas. Remove the finished puff pastries from the baking sheet and place on a plate or wire rack to cool.

Once the puff pastries have cooled completely, you can sprinkle them with powdered sugar.

Apple puff pastry made from ready-made puff pastry - a simple recipe for every day. A similar method of preparation (with cooking in starch) is typical for German cuisine. You can add cinnamon as a seasoning, but then the filling will turn out darker. I like another option - with lemon juice. Using it (and not using cinnamon) allows you to make puff pastries with a very light filling. But they taste only a little sour; this still doesn’t make them lemony.

Use of powdered sugar is optional.

Dissolve 10 g of vanilla sugar and 1 tbsp in cold water with freshly squeezed lemon juice. starch so that there are no lumps left.

Peel the apples and cut them into small cubes, removing the cores.

Mix the apples with the liquid and cook them together while stirring until the starch thickens. After this, let the filling cool. If you are in a hurry, you need to remove it from the pan onto a plate.

Before starting to prepare the puff pastries, set the oven to preheat to 200°C.

Cut a layer of puff pastry approximately the size of a baking sheet in half lengthwise and into 3 strips across. On half of each of the blanks, use the tip of a knife to cut a lattice, not reaching the edges by about 1.5 cm.

Place the filling on the side of the dough that does not have any cuts.

Press the edges of the dough on three sides. We move the puff pastries so that they do not touch each other.

Bake apple puffs from prepared puff pastry in an oven preheated to 200°C with air circulation at medium level for about 20 minutes.

If desired, you can lightly sprinkle them with powdered sugar immediately after removing them from the oven.

The result may not be as pleasant as, for example, the famous one for me personally, but it still turns out delicious.

And the choice of recipes is huge, and, it would seem, the same apples, but the result is completely different, but invariably aromatic and appetizing.

Today is a recipe for apple puff pastry puffs with photos. It’s from the “quickly” series because the puff pastries are made from ready-made store-bought puff pastry. Of course, you can make puff pastry yourself, but it’s not so quick to make, and the one sold in stores now is very decent and tasty.

For me, such dough is a kind of lifesaver - even if you just defrost it, cut it into small strips and sprinkle it with sugar and put it in the oven, in 15 minutes you will get delicious pastries for tea. In general, you can make a lot of different delicacies from this dough. I even have several cookbooks with recipes for puff pastry, sweet and savory pastries.

But today’s recipe for puff pastries is not from these books, but from the vast expanses of the Internet, in my opinion from say7. The introduction turned out to be longer than the recipe itself)) Let's cook.

We will need

  • Puff pastry – 1 package (450-500 grams)
  • Apples – 500 grams (I used less)
  • Honey – 1-2 tablespoons (painlessly replaced with sugar)
  • Powdered sugar
  • Butter – 1 tablespoon.
  • Raisins and/or cinnamon – optional (I “wanted” raisins))

How to cook

Filling. Cut the apples into small cubes and fry in oil until soft.

Defrost the dough, roll out, cut into equal rectangles. Place the filling on one half, cover with the other half, press the edges. Place on a baking sheet and bake until slightly golden brown. Sprinkle with powdered sugar if desired.

There is no particular point in this step-by-step recipe, it is very simple, but I myself love detailed recipes and, perhaps, some useful little things will still be useful to you. For example, about the dough.

Puff pastry can be made with or without yeast. Since I cooked puff pastries for two days in a row)) I tried both and immediately compared them.

I liked it better with yeast. Yeast, it is heavier and richer, and goes better with light fillings, such as in this recipe, but yeast-free, in my opinion, will be better with richer, “fat” fillings.

It also turned out to be definitely wonderful.

We take the dough out of the freezer 15-20 minutes before cooking, separate the layers, and place them on a lightly floured surface.

When they become relatively soft, roll them out one by one.

If you are preparing just puff pastries without filling, then you don’t even need to roll them out - just cut them and bake.

Cut into equal rectangles.

And I forgot to write about the filling))… It is advisable to prepare it in advance so that it cools down.

I used about half a kilo of apples according to the recipe, but it seemed like a lot to me, maybe I should have put in more filling...

Remove seeds and cut into small cubes.

Melt the butter in a frying pan; this was not in the recipe, but I thought it tasted better with butter. Place the apples in a frying pan, add a little water, washed raisins and honey. There was no honey either, this time I replaced it with sugar, it turned out delicious.

Simmer for 5-7 minutes. Let cool. (I don’t have step-by-step photos because I still have the filling from the first time, and the first time I didn’t take pictures, I didn’t know if it would turn out delicious))).

Place the apple filling on a rectangle of puff pastry, cover with a second rectangle and pinch the edges.

For beauty and more “grip,” we go around the edges with a fork.

Preheat the oven in advance.

As usual, grease the baking sheet with butter and lay out the puff pastries.

They cook for 15-20 minutes, at a temperature of about 180 degrees, but I was more focused on their color. They should be this light golden color.

Recipe for apple puff pastry:

First, let's prepare the filling:

1. Wash the apples thoroughly and cut them into cubes.

Melt a piece of butter in a frying pan.

2. Place apples in the pan.

3. Sprinkle with sugar and cinnamon.

4. Simmer until the apples are soft.

The filling turns out delicious - you have to constantly shoo away the household so that they don’t eat it before the dough is finished :)

Prepare the dough: defrost at room temperature, roll out a little.

5. Cut the dough into rectangles, make cuts as in the photo.

6. Place the filling on the back side of the cuts. Place as much filling as you can fit: the more, the tastier, but without fanaticism - so that you can pinch the edges.

7. Pinch the edges.

8. Place the puff pastries on a baking sheet and brush the top with yolk. Grease to obtain an appetizing crust after baking.

9. Bake at 220 degrees until golden brown.
