Draniki: cooking secrets

Draniki, delicious, tender potato pancakes with a golden-brown crispy crust, are considered a Belarusian national dish, although German gourmets were the first to master their preparation. Draniki are loved in many countries, but they are called differently.

Ukrainians prepare potato pancakes, tertiukhi and kremzliks. Poles fry plyatski, Czechs fry bramborak, and in different regions of Russia potato pancakes are known as kakorki, teruntsy and derik. The technology for making potato pancakes is simple - potatoes are crushed, mixed with eggs, flour, onions, garlic and seasonings, and then fried in oil like pancakes. Both adults and children love juicy, appetizing potato pancakes, and preparing this dish is easy, quick and enjoyable.

First secret: good potatoes

New potatoes are not suitable for potato pancakes, since they are not very starchy and the potato pancakes may spread or burn. In this case, starch or eggs are added for the binder, which are sometimes replaced with beaten egg whites. For 1 kg of potatoes, 2 eggs or 1–2 tbsp are enough. l. starch. By the way, some chefs believe that eggs make pancakes too dense, so it all depends on tastes and preferences.

Second secret: less flour

If the potato mixture turns out to be liquid, place it on a sieve and allow the liquid to drain. A large amount of flour spoils the taste of potato pancakes and they become rubbery. If the potato mixture turns out to be liquid, place it on a sieve and allow the liquid to drain.

At the same time, starch will remain at the bottom of the cup with potato juice, which is added to potatoes instead of flour and eggs. The crust of these potato pancakes turns out crispy and tasty. If you don’t have time to strain the potato juice, instead of flour you can add semolina, which absorbs excess liquid and makes potato pancakes tender, juicy and fluffy. For 1 kg of potatoes usually take 1-2 tbsp. l. flour or 3-4 tbsp. l. decoys.

The third secret: seasonings and proper frying

Fry potato pancakes only in a hot frying pan. One of the subtleties of preparing classic potato pancakes is seasonings and spices. Along with the potatoes, onions are also ground in a blender, which prevents the potato mass from quickly darkening. In addition to salt, garlic, black pepper, dried herbs and favorite spices are added to the potatoes. Fry potato pancakes only in a hot frying pan with a large amount of vegetable, melted butter or melted lard.

If you cook pancakes in a warm frying pan, they will look like boiled potato cutlets. The finished potato pancakes are placed on a wire rack or on a paper towel to remove unnecessary fat, and served with sour cream, mayonnaise, ketchup, meat and mushroom sauce. Belarusian housewives prepare traditional machanka sauce for potato pancakes, which contains meat trimmings, sausage, lard and onions.

  • Grated potatoes will quickly darken if you do not immediately mix them with chopped or grated onions.

Recipe 3: potato pancakes with minced pork in a frying pan

Appetizing, golden-brown potato pancakes can be prepared not only in the form of thin golden pancakes. This hearty second course is often made with a variety of fillings - chopped or twisted meat, chicken, mushrooms, sausage, cheese. And today I suggest making potato pancakes with minced meat - it turns out very tasty and satisfying.

Remember that truly delicious potato pancakes can only be made from good potatoes. It is best to choose root vegetables with yellowish flesh, which boils well after heat treatment. So-called “soapy”, watery white potatoes are not suitable - not only will ready-made pancakes quickly darken, but the taste will be so-so.

  • potatoes - 2 kg
  • pork – 700 gr
  • onion - 400 gr
  • chicken eggs - 2 pcs
  • sour cream - 50 gr
  • flour - 50 g
  • vegetable oil - 150 ml
  • salt - 1 tsp.
  • black pepper - 1 pinch

First of all, let's prepare the minced meat, since potato shingles quickly darken. To do this, cut the pork into pieces and pass through a meat grinder. To make the meat turn faster and easier, first keep it in the freezer for half an hour.

Next, we pass the peeled onions through a meat grinder (one large onion is half the amount of the indicated ingredients).

Salt and pepper the minced pork and onions. Mix with your hands and taste for salt. If necessary, add more seasonings.

To make the potato pancake filling juicy and tender, you can additionally beat the minced meat (a couple of minutes). To do this, simply forcefully throw the minced meat into a bowl or put it in a bag and beat it on the table. That is, we simply throw it from a small height. For now, put the prepared minced meat in the refrigerator.

Let's make dough for potato pancakes. To do this, peel the potatoes and onions (the second half of the ingredients). I’ll say right away that there’s definitely never too much onion in shingles. Moreover, onions not only add flavor to the finished potato pancakes, but also protect the grated potatoes from darkening longer.

Grind the vegetables on the finest grater. I have this attachment in my food processor, but I used to use a hand grater.

Add a couple of chicken eggs, sour cream, salt and wheat flour to the potatoes and onions. Use sour cream of any fat content - it doesn’t matter at all. By the way, sometimes I even use kefir instead. The main thing is that it is a fermented milk product, which will prevent the potatoes from darkening and make the potato pancakes more tender. It is also not necessary to use the highest grade of wheat flour - the first grade will do. It’s clear that some may say, why all these additives... Draniki are purely potatoes and onions... But that’s how I cook it and we like it that way.

Mix everything thoroughly (I do this directly by hand, it’s more convenient), taste for salt, and add it if necessary. By the way, do you know what is the beauty of stirring by hand? You can easily feel pieces of potatoes or onions that might have slipped through and not been chopped.

Now we will fry potato pancakes with minced meat. Pour some refined vegetable oil into the frying pan, heat it well and add a tablespoon and level the potato mixture so that you get a fairly thin pancake.

Then add the minced pork, giving it the shape of a flat cutlet. It is most convenient to make such preparations in advance so that they are already on hand.

Cover the meat filling with potato mixture so that the minced meat is not visible. We also level it with a spoon.

Fry potato pancakes with minced meat over medium heat until the bottom part is browned. Then turn them over with a spatula and continue frying under the lid until cooked. We do the same with the rest of the potato dough and minced meat, adding vegetable oil if necessary.

Place the finished pancakes on a paper napkin to absorb excess fat.

Appetizing, rosy potato pancakes are ready. They need to be eaten hot.

Serve this tasty and satisfying second course with sour cream and fresh herbs. Try it, you will like it!

Recipe 4: sorcerer potato pancakes with minced meat

Potato pancakes with minced meat (sorcerers) are a national and traditional dish of Belarusian cuisine, although there are many very similar dishes in other cuisines of the world. These include potato pancakes, tertik, potato pancakes, teruntsy, reshti, latkes, ragmunki, plyatski, bramboraki. And this is far from a complete list. It is not known exactly why these potato pancakes are called sorcerers, but the name itself, you see, is quite unusual.

In Transcarpathia, a pancake cake made from green pancakes with spinach and meat filling is also called sorcerers, although these are two completely different dishes. Potato sorcerers with minced meat are an excellent and very tasty version of potato pancakes, with which you can diversify your daily menu.

And even the minced meat itself, which plays the role of the main violin in this recipe, can also be varied. For example, adding a small amount of fried champignons, cut into small pieces, ham, bell pepper. We will now look at how to cook potato pancakes with meat.

  • Potatoes – 6-7 pcs.,
  • Onions – 1 pc.,
  • Eggs – 1 pc.,
  • Flour – 3 tbsp. spoons,
  • Minced pork – 400 gr.,
  • Salt,
  • Ground black pepper,
  • Vegetable oil.

Having prepared all the ingredients, you can start preparing potato pancakes with minced meat. First of all, let's prepare the meat filling. Place the minced meat in a bowl.

In my opinion, the most ideal minced meat for filling pancakes is pork. Pepper and salt it. Mix thoroughly with your hands. If desired, you can add a little onion or garlic. Place the minced meat in the refrigerator.

Now you need to prepare the potato dough for pancakes. Peel the onion. Rub it on a fine grater into puree. Peel the potatoes. Now it should be grated. I prefer a medium-hole grater, although you can use a small or large grater, depending on how you want your finished pancakes to look. In any case, the potatoes need to be grated quickly enough so that they do not have time to darken.

Place onion puree in a bowl with grated potatoes.

Beat in the egg.

Stir. Add ground black pepper and salt.

Use the quantities of these ingredients at your discretion. Add flour.

Mix the potato base for pancakes with minced meat.

Heat a frying pan with sunflower oil. Once the oil is hot, scoop out the potato mixture with a tablespoon and place it in the form of cakes.

Take a small amount of minced meat (about 30 grams). Roll it into a ball. Flatten with your hands. Place on top of potatoes. So fill all the potato pancakes with minced meat.

This needs to be done quickly enough, before the bottom has time to burn. Next, cover the meat with potato mixture.

Use a spatula to turn them over to the other side. Turn down the heat. Add sunflower oil if necessary and fry until done.

Draniki with minced meat or sorcerers are traditionally served with sour cream. You can whip up a delicious garlic sauce based on sour cream. To do this, add a little salt, garlic pressed through a press, and a couple of sprigs of finely chopped dill to the sour cream. After adding all the ingredients, stir the sauce and serve along with hot and tasty potato sorcerers.

Just like any other dish containing meat, tomato sauce, ketchup, spicy adjika or barbecue sauce also go well with them. Enjoy your meal.

Recipe 5: potato pancakes with minced meat and cheese in the oven

For cutlets:

  • minced pork – 400 grams
  • mayonnaise – 1 tablespoon
  • mustard - 1 tablespoon
  • salt, ground black pepper - to taste

For the cheese mass:

  • cheese – 100 grams
  • egg - 1 piece
  • mayonnaise – 1 tablespoon
  • garlic – 2 cloves (optional)

For pancakes:

  • potatoes - 7-9 pcs.
  • onion – 1 piece
  • egg - 1 piece
  • salt, ground black pepper - to taste

First of all, I'll do the minced meat. This time I have it from a store, which I basically don’t accept. But, firstly, it turned out to be of surprisingly high quality, and, secondly, this is a quick recipe, so you can deviate a little from the principles and indulge yourself.

Minced pork, but absolutely lean, tender and juicy. I will still add a tablespoon of mayonnaise and mustard to it to make it even tastier, salt and pepper accordingly:

I’ll stir it, let it brew for a while, and then make these cutlets:

I'll put them in the refrigerator for a while, and in the meantime I'll get to the cheese.

I don’t use the most expensive cheese, as long as the taste suits me. I grate it on a coarse grater, add mayonnaise to it by eye, about a tablespoon:

There shouldn’t be a lot of it, its task is only to help me mix the grated cheese. If you overdo it, the cheese mass will simply drain from my future pancakes.

To prevent this from happening, I’ll add one egg to the cheese:

I will mix it and also put it in the refrigerator.

For added spice, you can also squeeze a couple of cloves of garlic through a press, but today I’m not in a garlic mood, so at the last minute I changed my mind about adding it.

Now it's time for the potatoes themselves. I will peel the required amount and one large onion. I will grate one potato, a little onion, etc. on a coarse grater, alternately. This way the potatoes will not darken, and the onions will be evenly distributed in them.

At the end, salt and pepper the peeled potatoes with onions:

Then I’ll put it in a colander to drain the released juice:

Then I’ll put it on a plate, mix it with one raw egg for a better binding, and get straight to the potato pancakes themselves.

To do this, I will place parchment or a special non-stick mat on a baking sheet. I will distribute the following raw potato cakes evenly on top, at the same distance from each other:

I’ll put a minced meat cutlet on them:

I'll cover it all with the cheese mixture:

I'll put the potato pancakes in a preheated oven.

I usually cook them at 200 degrees for 20-30 minutes until a beautiful golden brown crust appears.

Then I admire what happened, but not for long, because almost everything is instantly eaten.
