  5. Knead into a homogeneous soft dough, which should be sent to the refrigerator for 30-40 minutes.

  6. Roll out the cooled dough carefully into a thin layer.

  7. Cut out circles of the required size and fill in the basket molds.

  8. Lubricating the molds with additional fat is not required, because the dough already contains a lot of oil, and so that it does not swell when baking, you should pierce it with a fork.

  9. Place the dough baskets in the freezer for 15-20 minutes, and then place them in an oven preheated to 220 ° C for 15 minutes.

  10. Pour 50 ml of water into a saucepan with a thick bottom, add 180 g of sugar and put on low heat.

    Do not stir the mixture too often, as this can lead to crystallization of the sugar!



  11. Wait for the syrup to boil, boil for about 5 minutes, and then check the temperature of the mixture with a kitchen thermometer. It should be equal to 120 ° C.

  12. Beat 3 squirrels on medium mixer until soft peaks.

  13. Continuing to beat, pour the sugar syrup into the whites in a thin stream.

  • 5. While boiling the syrup, beat the whites into the foam. Add vanilla sugar and whisk. Then pour the prepared boiling syrup into the protein mass. Do not stop whisking.
  • 6. Add a couple of drops of lemon juice and beat for another two to three minutes.
